Now on to dinner...i thought something with seafood would be fun, exciting, and special.
Crab Potpie
3 sheets of phyllo dough
3 Tbs butter melted
Paprika
3 Tbs butter
1 Cup chopped onion ( i used one large onion)
1/2 Cup sliced celery ( i used one stalk)
1/4 Cup flour
2 Cup milk
3 6.5 oz cans of lump crab meat drained or 3 6-8oz packages of imitation crab meat
1/2 Cup frozen peas
2 Tbs dry sherry
1/4 Tbs dried tarragon or thyme
1/4 Tsp salt
1/4 Tsp black pepper
1. Preheat oven 375. Unfold dough remove one sheet lightly brush sheet with some of the 3 tbs of melted butter, fold in half crosswise. Brush again with butter. Repeat with remaining dough and butter
2. Stack sheets on baking sheet to make six layers brush top with remaining butter. Sprinkle with paprika. Bake 8 to 10 min or until brown and crisp. Cool on wire rack. Break into large
shards; store in airtight container till ready to serve.
3. Large skillet melt 3tbs butter over medium heat. Add onion and celery; cook 2 to 3 min just until tender. Add flour; cook and stir for one min. Add milk all at once. Cook and stir till mixture begins to boil. Remove from heat; stir in crab meat, peas, sherry, tarragon, salt and pepper. Transfer to an ungreased 2 qt baking dish. Cover and refrigerate for 4 to24 hours.
4. Before serving preheat oven to 375. Bake covered for 25 to 30 min or until heated through. Serve with phyllo shards.

Instead of using phyllo dough....(which i think is way too expensive)I baked homemade bread and served it with honey butter.
To make honey butter add 1Tbs of honey to 6Tbs of butter. This makes a delicious spread!
