Olé a fabulous mexican meal!


A couple weeks ago i was thumbing through my crock pot book ("Fix it and Forget it cookbook") for a yummy dish for dinner. I found this super easy super yummy dish that was a big hit!

Chicken Olé


10 3/4 oz can of cream of mushroom soup
10 3/4 oz can of cream of chicken soup
1 cup sour cream
2 Tbs grated onion
1 1/2 cups of grated cheddar cheese
12 flour tortillas torn into pieces
3 to 4 cups cubed cooked chicken
7 oz jar of salsa ( I used taco sauce instead cuz i had some leftover after i had taco a few night earlier)
1/2 cup grated cheddar cheese ( I was more generous with my cheese....i mean really can you ever have enough cheesy goodness?!)

1. In separate bowl, combine soups, sour cream, onion, and 1 1/2 cups of cheese
2. Place one-third of each of the following in layers in slow cooker: torn tortillas, soup mixture, chicken and salsa. Repeat layers two more time.
3. Cover. Cook on Low 4 to 5 hours (this recipe doesn't do well on high....however i put it on high for an hour then on low for about an hour or so and it turned out great!)
4. Gently stir. Sprinkle (or douse..lol) with remaining cheese. Cover. Cook on low another 15 to 30 min.
5. Serve with tortilla chips, and lettuce salads.
Makes 8 servings

I loved this dish...it had just enough spice without being overly spicy...and of course the cheese didn't hurt ( I used a mexican cheese blend that i bought on sale)
